What a Half of Beef Yields
(For a quarter beef, cut the amount in half. For a whole beef, double the amount
shown.)
Roasts
Heel of Round - Roasts from the hind quarter. One roast
per half.
Chuck - Roasts from the front quarter. Approx. 6-8 roasts
per half.
Arm (Round Bone Roast) - Front quarter roast. Approx.
3-4 roasts per half.
Rump (Hind Quarter Roast) - Approx. 1-2 roasts per half.
Brisket - Used for corned beef, stew, or ground for hamburger.
One roast per half.
Short Ribs - Ribs used for barbecuing or
boiling. Approx. 3-4 one and a half pound packages per half.
Soup Bones - Meaty portions of the shank
bone. Approx. 3-4 one and a half pound packages per half.
Ground Beef Average 90%+ lean. Packaged 1
or 2# packages. Approx. 65-70 lbs per half.
