Processing
Our beef is custom processed in our own licensed, USDA inspected facility. Your
beef will be aged 14 – 28 days to enhance the flavor and tenderness and then custom
processed to your specifications.
Pricing
Your price will be a per pound price based on the hanging weight of the carcass,
which is the weight after harvest, including meat, fat and bone. With an average
live weight of 1,250 lbs, the typical beef animal will produce approximately a 760
lb hanging weight carcass. After processing (trimming of excess fat and bone), you
will have approximately 565 lbs of tasty beef!
What You Get
In general, a beef carcass divides up roughly into 15% to 25% steaks, 25% roasts,
25% to 35% ground beef and 25% unusable fat and bone. Remember, percentages will
vary slightly depending on how you have your beef processed.
